zoiks, you have all that stuff in your pantry?
Alton brown (food network .com) has a reasonable recipe that covers most of the bases.
here is a demonstration (not of Alton's)

that is good (but uses some slightly different ingredients)

what always amazed me is how these little old ladies can set up a simple burner on the beach and churn the best pad thai out--and it cost like 50 cents

Ok, you will think I am crazy, but there is a great Pad thai "kit", it is made by Thai Kitchen (should be in most grocery stores). Costs about $3.

It has the noodles and sauce, 2 servings per box (2 boxes makes way more than what 2 adults, 2 kids would eat). You add egg (scrambled), chicken or shrimp, bean sprouts and crushed peanuts. We also use the thai hot chili sauce on top.

(we have also added juilienned carrots, green onions as garnish and have added pineapple and water chestnuts-not traditional pad thai, but good)

Anyways, it really is just about as good as you can get in a restaurant- we are all hooked. Super easy too.

X - I agree with djmom on the kit; it's unexpectedly good. (Not too sure about sodium content, if you have that issue.) Also, just this past weekend in fact, we picked up the noodles at Whole Foods (in West Hartford  ) and added our own combo sauce of sczeshuan (sp?) sauce, with soy sauce and sesame sauce with some added hot oil. Add to that veggies with some chicken or shrimp and it's a quick, easy, delicious meal. Too bad it was your last night's meal, I was going to ask what time should we plan on coming? Ali~

I'm going to third the kit, although I just always end up getting fabulous take-out from the great Thai place by my work.
