We stayed here last year. Very good location. Although only says 7BR and 7BA, might be a configuration you can do to accomodate another. Have never rented a kayak, actually have never kayaked.......but I would think Coral Bay would be the best. Maybe around the mangroves and hurricane hole, seems more green and a slower pace.

We loved Gertrude's! Lunch at Soggy Dollar is good too, love their chicken roti. You've got the right idea to explore a bit, plus the other places are a lot less crowded :)

We have had both Joe's and Candi's and they are both good. We prefer Candi's though, both for taste and convenience. Must try Barefoot Cowboy next trip.
