I'll put in another vote for Capt. Phil and the Wayward Sailor. We did a half day charter this past December with our 5.5 yo and 2.5 yo and they had a great time.

Capt Phil is great with kids - so is his mate Tarn (sp?). Not sure I would try a full day just yet, that would be a long day.

Check out jazz villa. We stayed there with 2 1.5 yr olds. You obviously need to be vigilant around the pool, but that's everywhere. Good layout for kids.
