I love fresh apple cider and I would love to bake with it. The only recipes that I can find are for a cake that is made with cake mix and cider.
Does anyone have any apple cider baking recipes that they would like to share?

X, This doesn't answer your question, but I wanted to post this recipe. At least it's apple related

. One of my co-workers brought these in and I had to get the recipe. They were very tasty.
Apple Brownies
1/2 cup butter, softened
1 cup sugar
1 egg, beaten
1 tsp vanilla
1 large apple, peeled, cored, and chopped
1 cup flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup chopped walnuts
Cream butter and sugar. Beat in egg and vanilla. Sift dry ingredients and work into first mixture. Mix in apples and walnuts. Batter will be stiff. Spread into a 8x8 inch baking dish. Bake at 350 for 35-45 minutes.
You can serve with ice cream or whipped cream sprinkled with cinnamon.
I really liked the nutmeg flavor to these "brownies". They were also not overly sweet which I like. I'll bet some nutmeg instead of cinnamon sprinkled on the iced cream or whipped cream would be even better. We just had them plain at work.
Jeez, now I'm getting a late night ice cream craving. I will NOT eat the 340 calorie ice cream drumstick in the freezer that is calling me

.

I love fresh apple cider and to ferment it. We hit Foggy Ridge Cidery on Saturday. Very nice hard cider made with traditional American cider apples, not dessert apples. Yum!!
Apple Cider Cake sounds tasty. I'm looking forward to recipes.

I have found a few but I was hoping for an actual review of one.
Here is a hard cider recipe
Hard Apple Cider Cake
Ingredients:
6 c. flour
1 tsp. baking soda
½ tsp. salt
1 tsp. grated nutmeg
1 c. butter, softened
3 c. sugar
4 eggs
1 c. cider (B. F. Clyde’s hard apple cider, not sparkling, is what we use. Any good cider should work but something dry rather than sweet is best.)
Directions:
In a bowl, mix together the flour, soda, salt and nutmeg and set aside. In an electric mixer, cream butter well, add sugar gradually, creaming until fluffy, then add eggs one at a time and beat thoroughly. On low or “stir” speed, add the flour mixture alternately with the cider, beating until smooth after each addition.
Grease two loaf pans (or four smaller ones) and distribute batter evenly. Bake at 350 F for about one hour (gas oven may take 10 minutes longer) until an inserted toothpick comes out clean. Keep moist with a chunk of apple in the container. Freezes well.

I recently got a recipe for apple cake with caramels melted on the top, but I can't remember if it had cider or not.
I think I am going to baste our thanksgiving turkey with cider this year... at least that's the tentative plan.

OK, I found this cake. No cider, but it sounds like the perfect, easy, delicious apple dessert for fall.
I'll try it and let you all know.

I spent a perfect fall sunny Sunday at Cider Hill in Amesbury MA picking late season raspberries and Cortland apples.
Then we waited in line for hot cider donuts covered in cinnamon sugar. To top it all off, cold-pressed fresh apple cider.
OMG!!!
It was literally a perfect New England autumn day!
