I LOVE plantains, but I wasn't too successful in cooking them. I tried 2 or 3 different methods I found on the net. Your way sounds so easy! I guess I need to try this again!

I literally just had someone tell me how she cooks them. She said to wait till they are black on the outside like an over-ripe banana then cook them in a frying pan with butter and maple syrup.
I am gonna try both ways - see if I have any luck.

This was my first time cooking them too. Plantain needs to be really ripe..dark yellow or turning black. I would not use them if they were completely black. Sliced them up in a little bit of oil and cook them on medium low heat until lightly browned. When done put some butter on them and brown sugar. Real easy

Enjoy!!!!

Depending on how you are cooking them (there are several ways to cook them) is how you choose what stage of ripeness you want them to be. Black is the sweetest stage and green is the more starchy stage.
Here is a good guideline:

I just bought plaintains for the first time this week. I made a cuban meal and planned on fixing them as a side, but they weren't ripe enough yet. (I was looking for really ripe, almost black) I guess I will be fixing them in a couple of days, so I'm happy to see your suggestions.

Tostones rule! I like them green starchy and served with salsa.
FYI, I'm allergic to raw bananas, but never have a problem with cooked plantains.
