Am I correct to assume that you can bring liquids in your checked luggage that are larger than 3 oz?

Yes that is correct.

The 3oz limit only applies to what can be put in your carry-on; and they all have to fit into a Quart sized ziploc bag.

You are allowed to purchase liquids to carry on after you have passed through security.
