Pia, I was thinking much of the same thing.
I actually like to cook but lack the time. I would be more willing to cook on vacation if the recipes were relatively ease and "islandly" in nature like Liamsaunt appear to be.
Our next rental has an indoor/outdoor kitchen so I am doubly inspired.

Pia, do you like to cook out on the grill? I have a great (and easy) recipe for Tuscan Style Grilled Tuna Steaks! I prepared them on our second night at Calypso Del Sol, and they were pretty darn good!

I'd be happy to share some recipes. I have a little notebook that I bring down to St. John with me that I've written recipes in over the various trips. I actually have a bunch of them already typed up. I wonder if I should pm them to people that are interested? If I cut and paste here it would be a long post, and I am probably already pushing everyone's patience to the limit with my endless trip report!
As far as cookbooks I like, I recommend the Barefoot Contessa books, especially the first one and family style. For Italian, I like Marcella Hazan's Classics of Italian Cooking. For Mexican, Rick Bayless, Mexico: One Plate at a Time. For general reference and standard American stuff, I consult the Joy of Cooking. I have a bunch more I use a lot (sad but true fact: I own over 400 cookbooks!), but these are some that I use regularly.

Pia - Me, too...have me over and I will cook for you. I love to cook. Mainly I just make stuff up...sometimes I do use a recipe, but I always change it, omitting ingredients that I don't like/have and adding ones that I do. It works, so I guess that is all that matters.
I'm not a baker though, as I don't really have a sweet tooth, so desert is on you!!

If it's not too much trouble, pm me too! I love to watch Barefoot Contessa, but her recipes aren't exactly healthy and lowfat as yours appear to be. She's more on the lines of a New England Paula Dean. I love them both, but I'm probably more of a Rachel Ray kind of cook.
That shrimp and pasta dish you made looked to die for!
And when you make your grilled shrimp I assume you marinade it in something.........?

400 cookbooks, good for you. I have quite a few, but no where near that many. I find for the last year or two I have stopped buying cookbooks and just "surf" for recipes and then print them out.

I especially like the websites where people enter their comments and opinions of the posted recipes that they have made.

KPllumm..........I do exactly the same thing. I figure if hundreds of others have tried a recipe and love it then it's a safe bet. I never buy cookbooks anymore.

I'm so tired of trying to cook healthy it takes the fun out of it.

Why don't you just do a recipe post? That way, everyone can look or not look, as they choose, and the post would be easy to find, if lost, later.

400 cookbooks? Amazing. I'm always so fascinated by people that make cooking a priority. I love to cook and really get into it when I can, but it never seems to fall near the top of the list for very long.

Maybe I just need some inspiration.

Maybe we should all submit our favorite Caribbean and other recipes and Anthony can get going on publishing a cookbook.
