Does anyone have a tried and true West Indian Chicken Roti recipe that they LOVE and would like to share? I got a wicked craving!

cannot vouch--but it uses st johns own blind betty-- so...goo omen?

Not tried and true, but Emeril has a very highly rated roti recipe that a ton of reviewers from the West Indies have said is really good:

Read the reviews to get some tips. Many island rotis also contain potato and/or chickpeas, so you may want to add that. Don't forget the mango chutney to make it taste even better. You can purchase at Whole Foods in the British or Indian Food section.

The Caribbean Choice recipe already linked here is my go-to chicken roti recipe. I make my own roti bread instead of using "flour" tortillas though
