Love entertaining at the shore but my old standbys are getting old. The guys love to "rub antlers" by the bbq but I'm looking for something different. I have a recipe for a seafood lasagne with a bechemel sauce but haven't tried it. I've done stuffed flounder, grilled tuna, seafood marinara. Anyone have a tried and true, do - ahead recipe? Seafood would be good..

Do-ahead and seafood is a little tough. What about a grilled tuna nicoise salad platter? It looks beautiful and you can make all the elements and assemble it ahead of time. Just put the dressing on right before serving. I really like Ina Garten's French potato salad recipe for this, and you can use the same dressing on the rest of the platter. Here's the potato salad recipe:

When I make this I also put on tomatoes, blanched green beans, arugula, hard boiled eggs, olives, and lemon slices. Plus the tuna of course. The only other thing you need to complete the meal is some crusty bread.

How about making some nice crabcakes? You could make extra and have them the next day on rolls for lunch.

We've been enjoying results from Bobby Flay's Grilled Tuna Burger recipe.
Simple, and delicious!

How about a sausage and shrimp gumbo, or a great seafood gumbo? This page has some terrific, easy,, basic gumbo recipes. I always ad-lib, but just remember: if you burn your roux, throw it away!

I love a good lasagna but it seems so heavy in the summer so make Lasagna roll ups.
I am not really a measuring cook, so...
Boil lasagna noodles, rinse well and cool
Mix ricotta, shrimp, crab, and lobster or any combo of seafood with one egg, parmesan, salt and pepper and a dash of old bay.
Place a spoonful of mixture onto center of the noodle and roll up.
You can use tomato sauce or any cream sauce. A nice basil cream is really good with it. A little sauce in the baking dish then some more on top and some fresh parm, bake for about 14 minutes to an hour.
