Jorge - I was on STT in May '05. And, granted we stayed at Frenchman's Reef, but I couldn't stand the air conditioning and left the slider open all the time, even at night. Other than a few mosquitoes, there were no problems. Not too hot. As wishwewerethere said above, it did get muggy after a shower, but it gets muggy the minute you step outside, anyway 
For our trip this May, I rented a villa without A/C, but it's high on a hill and I'm told with the breezes, A/C isn't really necessary. Where is Inn Paradise located? Is it up on a hill?

Ive stayed above bongo at Alesandra if it has a west facing exposure it can get hot Added a lanigh "SP" and some lattice work over the patio doors in the great room to keep it cooler made a huge differance.Id think AC in the bed rooms at that time of the year would be a must. If you don't need it great but if you do it would suck not to have it.

Inn Paradise is the next to the last house on Rock Ridge Road. Elevation of about 335 feet. It is on the right before you get to Mar de Amores, which is above it. We stayed at Mar de Amores in November before it had a/c and were fine. Both of these face south but more east so the afternoon sun isn't as bad as the ones that face west. Better for sunrises than sunsets, though.

I did a quick search of some sites and found these 4 bedroom villas that show available starting May 5 for a week. They all have AC, at least in the bedrooms:

Just to give them a few options. I personally would really not want to be without AC in the bedroom.

How many in the party (do they need 1 bedroom or more) I personally would not want to have no a/c at least in the bedroom in May - imho
