Dessert Help! Stat!

In addition to stressing out about my get together this weekend and meeting all new people, I was just asked to bring a dessert.
I am not a baker...at all. I do not want to show up with some grocery store cookies and we do not have a good bakery around here.
It will have to travel well, as I have a 3 hour ride to get there.
Any suggestions? Something, maybe from a box, that I can jazz up?
Did I also mention, I have a 2 hour window for making it?

My none-cooking friend's go-to dessert -
tollhouse cookie dough from the diary section
really good ice cream
hershey syrup and/or caramel sauce
smoked almonds
whip cream
to make cookie sundays. let me tell you, the combo of the warm cookies with the cold ice cream and salty smoked almonds is awesome.
the only downside is you would need to use the hostess's oven, which may or may not be a big deal.

The first thing that comes to mind is a berry trifle. It is quick, easy, and light, and looks pretty. You can make one using a store bought angel food cake, fresh strawberries, raspberries, blueberries, and/or blackberries. The pudding like layer has lemon yogurt, cool whip, fresh lemon juice, etc. Let me know if you're interested and I can look up the specifics.

berry shortcakes with whipped cream--use the bisquick recipe on the box for teh shortcakes and cut up strawberries an dblueberries (and maybe peaches too!)
whip the cream when you get there--
done!

How about something that needs no refrigeration? 3 hours in the car will be rough for anything cold.
I have no idea what her kitchen is like and I really don't want to be "that" person that comes in with a bunch of stuff I need to put together.

Zoiks in this weather everything is going to need refrigeration!
but how about a peach cobbler--that wouldn't really need the fridge and it's easy and peaches are in season--warning there is a bit of flour involved.....

What about a Derby pie or pecan pie? Might be a little rich for this heat, but they travel well. Blackberry cobbler would be another possibility.

My mom makes a peanut butter iced brownie that people rave over. Just bake a typical brownie mix. My mom uses a big cookie sheet and uses two mixes. The cheap mixes tend to work best. Bake as directed.
For icing she uses 1/2 brick cream cheese (let it sit out so it's soft) 2 Tablespoons creamy peanut butter or more to taste, 1 tsp vanilla, 1 package powdered sugar and then add milk slowly 1 Tablespoon at a time until you get it to icing consistency, you want it smooth, but not runny at all. It really is quick and easy to make and like I said, they go quick!
No cooling needed, if you make sure the brownies are completely cool before icing and then let the icing sit on them for a bit, it will harden enough that you can put covering on it with no problem.

my quick key lime pie
Graham cracker crusr from the store a containor of cool whip 1/2 cup key lime juice and a can of sweetened condensed milk mix juice and milk together good and fold into the cool whip put into shell chill

I just read your other post about the event you are cooking for. You would definitely only need one brownie mix!
I wish I lived close, I'd bring you either a Tastefully Simple Almond pound cake mix or a Classy Chocolate Pound Cake mix (you literally only add two ingredients to the mix and you are good to go) They are delicious with fresh berries and you could buy some whipped cream on your way to the house. They are great all by themselves too. If you know anyone who sells Tastefully Simple in your area call them asap. Otherwise you can look up a consultant online according to your address. We are used to getting last minute phone calls! These would be my absolute first choice to take for this type of gathering and also you could grab a jam or mix or something for your hostess gift so you'd kill two birds with one phone call!!

Do you sell Tastefully Simple? I want to have a party (once my living room furniture arrives), and I am trying to find a consultant here in Nashville. I have been asking everyone who sells it if they have any friends here before I just pick a stranger off the Internet...
I was going to suggest a black forest cheesecake as something that's easy and jazzed up from a mix but it does need refrigerated. Brownies were my second choice!

Lulu-yes, I do sell Tastefully Simple. I loved their products so much that I decided to give it a try. I did parties for a couple of years because they are so fun,but then got to busy and I mostly do a couple of open houses a year and then just sell it to friends and family at cost!
Let me see if I can get a recommendation for you for someone in Nashville!
