Any suggestions? (cooking related)

So Charlie has been doing all the grocery shopping lately - believe me I'm not complaining...but....

I now have a large container of vanilla yogurt in my fridge that I don't know what to do with. Any recipes out there that would use up a good portion of this? (It was supposed to be plain - Charlie thought plain and vanilla were interchangeable!) :)

Also in the fridge I have a pound of ground turkey and I just can't think of what to do with it. No burgers. Any other suggestions? I was thinking meatloaf but I don't seem to ever get that right.

Help my uninspired kitchen!

Are the NJ blueberries still popping? I've been seeing them in the grocery here for $1.99/pint. Vanilla yoghurt...

Ground turkey? Mix it with ground beef for meetballs? I'm not a ground turkey fan, but it does tend to lighten the meatballs up.

Mary Beth, I use ground turkey for almost everything...except meatloaf! LOL! Try it in spaghetti... you can't tell the difference and it's much lighter feeling after you eat it. You could also make a ground turkey stroganoff, or turkey tacos or enchiladas! Just be aware that when you cook it, it doesn't have the fat content that ground beef does, and a fair amount of water will come out of it. I let the water hydrate my spices and then it cooks off.

I use the turkey a lot but I just have no inspiration for it right now. Something Mexican-ish seems likely though.

I hate to ask, but ground turkey gives me some, well, GI symptoms. Do you do anything special to curb any downwind effects?

I like liamsaunt's suggestion. Larb Gai is a favorite and turkey is close enough to ground chicken. We like it cold and served with slivered green papaya on lettuce. Apples are a reasonable replacement for green papaya.

I have been making a lot of Bircher Muesli for breakfast.

It typically uses plain Greek yogurt, but the vanilla would work.

There are several variations out there -

Mix yogurt, oats (aka uncooked oatmeal) and grated apple. Let it sit overnight. Mix in an assortment of dried or fresh fruit, nuts, etc. It's great with fresh blueberries.

Use a lot of ground T, but not much in the summertime.

I too use turkey instead of beef.

For what its worth my meatloaf recipe.
Warning, I cook like my grandma, I don't really do measurements.

Add to turkey one- two eggs, a good sized handful of chopped parsley, I also have basil in the garden now so I throw some of that in too, about 3/4's cup of seasoned bread crumbs, 1/2 cup good grated cheese, a pecorino or locatelli, fresh ground pepper, some garlic powder, no salt, cheese is salty enough. Mix it all together and viola. Fashion into the shape of your choice and cook at 350-375. I cook until the internal temp is about 150.

Turkey Chili works too, also a staple in my house because it is one of three things my husband can cook.

Sweat off some onions and garlic, brown the turkey, throw in some diced tomatoes (canned), pinto beans (canned for us) lots of chili powder and chicken broth or water.

Racehl Ray has an awesome recipe for Turkey Meatloaf. You mix it with ground beef, and Stuffing Cubes. It ends up taking like Thanksgiving Loaf! She has it make enough so you make 2 huges loafs and then you use the left overs to make enchilasagna. Yum Yum! You can find it on her website.

I would go with smoothies for the yogurt or make the smoothes then freeze them for a frozen treat!

I have a great Weight Watchers recipe for "Skinny Chimichangas" that uses ground turkey.

For the yogurt, layer it with some granola and fresh fruit for a yummy parfait!

My family loves the Weight Watchers turkey chili recipe. Throw it all in the crock pot all day..loveit
