What kind of trouble might be stirred up if I were to book a two leg flight to St Thomas (or anywhere) and a two leg home and then bail the last leg and just rent a car for the final short hop leg due to an overnight layover. Would checked baggage be pulled if the passengers don't show up?

The answer to that is yes.

Not only YES, but they will delay the flight to do it.

Continental has a great fare from alb-STT, like $350. But there are no late flights that work with the 7:00 arrival of STT-EWR coming home. All are the following morning. To save $150 apiece for 4 people it might be worth renting a car for those last 180 miles.
