But it's so much fun hacking the heck out of the mango.
Does this pit it and you still have to peel it??
I second the mango colada's at the Gecko Gazebo - I usually have a second one too

A mango pitter! I'll be getting one of those. Peeling and trying to get the fruit off that pit is the pits. I love mango salsa with pork and beef marinated in Cruz Bay Grill Rub. Food porn soon come.

Janet I also have a second one too

But then after that I think I max out. Only so many blender drinks at a time for me!
Anyway it doesn't peel it just pits. Once you have the mango in 2 halves you are supposed to score it in to cubes and then I think run you knife between the skin and the flesh to remove it. I need some practice with that

I didn't care about cubes so I just used a spoon to scoop it out.

I have 2 mango colada recipes. One with pineapple juice one with out. What do you think is best? Or should I just taste test both?
1/2 cup pineapple juice
1 cup ripe mango, cubes
2 tablespoons fresh lime juice
1/3 cup cream of coconut
1/3 cup light rum
1 cup crushed ice
1/2 cup unsweetened mango juice or nectar
1 cup ripe mango cubes, fresh or frozen
Juice of one lime (about 2 tablespoons)
3 ounces (1/3 cup) cream of coconut
1/2 cup rum
1 cup crushed ice (or 1/2 cup if using frozen mango)

I'm going to try the first one tonight because I have all those ingredients. However, that means I'll need another mango for my salsa. Little Ayer loves mango smoothies, so I'll fix one for her without the rum. Thanks for the recipes.

MaryBeth, I made an almost identical pasta to yours on Tuesday night--zucchini, summer squash, herbs, tomatoes...and some leftover grilled pesto marinated chicken.

Those fritters look great. Was it a simple recipe with a basic egg batter? Did you put basil in it? When I make a zucchini fritatta I put in lots of basil.

no basil. I didn't think of it and didn't have any. it was an egg a flour mix and I also added in some parmesan cheese and garlic powder. Shredded in a red onion w/ the zucchini. Never made them before but they were very good. Charlie mixed up the sauce and it went nice with them.

Thanks. I think I'll put some basil in as I have lots of it in my garden. Forgot about the garlic and parmesan. Got all the ingredients and the fritters will be on the table tomorrow night.

This is closest to the recipe developed on our second trip to St. Martin. The variation is that I use pineapple/orange juice and cut up a whole mango. Mix in a blender and top with fresh ground nutmeg and a paper umbrella
