Past week, working backwards...

Tonight: Creamy potato leek soup & grilled cheese sandwiches! Perfect for a damp fall evening.

Yesterday: spaghetti with turkey bolognese, spinach & avocado salad

Friday: smorgasbord: random leftover dinner 8)

Thursday: oven-fried sole with rice and chopped heirloom tomato, avocado, & feta salad

Wednesday: red beans & rice

Tuesday: cod/corn/potato chowder

Monday: Indian takeout!

Ok, I think I have a plan for this week:

I'm doing a Paleo nutrition challenge (meat, seafood, eggs, veggies, fruit, nuts & seed). If anyone has any good recipes, I'd love to try them.

Today: Meatza Pie with carmelized onions, mushrooms, artichoke hearts & roasted red peppers
Tomorrow: leftover stuffed peppers from yesterday
Wednesday: ground turkey meat sauce over spaghetti squash
Thursday : most likely leftovers from Wednesday
Friday : Date night

I didn't really develop a menu this week since I am sick

Last night: Leftovers from Sunday night
Tonight: Chicken Noodle soup and grilled ham and cheese
Tomorrow: Chip has a work event so I will have left over soup
Thursday: Chip is off, so dinner is in his court
Friday: No idea

I need to get back to normal next week

We're rudderless this week. I had to work too much.
Sunday was my attempt at remembering the deep peppered pork roast. It was awful. I've called my ex-husband to search his house for that book!
Yesterday was chicken with wild rice soup.
Today we had spaghetti pie.
Tomorrow may be those taco chicken stuffed shells.
And beyond that, I don't know....

I'm finding this thread very inspiring for planning, so here I go:

Monday- sausage, alfredo noodles, broccoli rabe
Tuesday- fish tacos with mango salsa
Wed- Spare Ribs and rice and broccoli
Thursday-crock pot chicken and mashed potatoes with turnips and fresh green beans
Friday-corn meal crusted tilapia and homemade macaroni and cheese
Saturday- Sloppy Joes
Sunday- Homemade Salmon Cakes with horseradish tartar sauce

It's been a crazy week, so there have been more takeout nights than usual!

Monday it was ratatouille with wild mushroom risotto (crazy-good!); accompanied by a simple baked chicken breast for my husband (I'm trying not to eat much meat these days).

Tuesday & Wednesday were takeout & leftovers

Last night it was a throwback to my childhood in the UK -- baked beans on buttered toast, and scrambled eggs.

Tonight I'm making a hearty mushroom & barley soup, planning to serve it with crusty french bread & a spinach salad.

Scalloped potatoes and ham today. It was delicious!
The rest of the week:
Chicken and biscuits (AGAIN! By popular request)
Meatloaf and "yellow rice"
City chicken (actually pork) and leftover scalloped potatoes
Jerk chicken and "yellow rice" (it's the spanish stuff in a package - we love it!)
Taco puffs (taco fillings inside of refrigerated biscuits, kind of shaped like a pate)
Chicken parmesan and a new spaghetti shape to me - it's totally tubular :D

Last Night: Crock Pot Beef Stew
Tonight: Chicken with saffron rice and beans
Tuesday: Weight Watchers Potato Chowder (crock pot)
Wednesday: Not sure, I am thinking Ravioli bake
Thursday: BBQ in Hartford with Marybeth (MBW) and Charlie!
Friday: Final camping weekend of the season so I have no idea yet!

Friday: broiled cod and broccolini
Saturday: sushi
Sunday: seafood fra diavolo
Monday: I am not actually sure yet, we are staying out on cape cod until sunset so might have to just do something small and fast when we get home.
Tuesday: Thai-style shrimp and scallop cakes with cabbage slaw
Wednesday: roasted pepper quesadillas
Thursday: whatever fish comes in the Csa box.

Monday - roasted chicken, salad using the leftover nuts, dried cherries, apples and blue cheese from the fridge and my son's "favorite rolls" (frozen rolls from the grocery store)

Tuesday - round roast, potato dumplings (box mix) and whatever veggie I find at the store. I am not hating brussel sprouts anymore and the boys love them so if there are any fresh, I will pick them up.

Wednesday - shrimp with something?

Thursday - steaks on the grill, baked potato and salad.

Friday - dinner out

PAgirl - potato dumplings? Never heard of them. Texture like dumpling-dumplings?

Yep, from a box. Panni brand has smooth and shredded versions. The dumplings are dense, sort of like if you formed thick mashed potatos into a ball and boiled them.

Shoemak38 - my father (and his mother and sisters, my aunts) actually preferred the box mix to homemade. They were WWII refugees and became smitten with all things convenience/packaged once they came to America in the 50s.

We are big campers but we are RV campers! We started with a tent then moved to a pop up and now we are on to an RV. There is no way my tired old a$$ would sleep in a tent anymore!
