it was supposed to be peach but I only had apricot so that's what I used. Don't tell Bobby Flay!

Grilled Chicken Breasts with Spicy Peach Glaze
Recipe courtesy Bobby Flay





Spicy Peach Glaze:
2 cups peach preserves or jam
1 tablespoon finely chopped garlic
3 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 small jalapeno, finely chopped
Salt and freshly ground pepper
8 Frenched" chicken breasts
4 ripe peaches, cut in half and pitted
Combine Spicy Peach Glaze ingredients in a medium bowl and season with salt and pepper to taste. Reserve 1/2 cup.
Preheat grill. Brush the chicken with olive oil and season with salt and pepper to taste. Place skin-side down and cook for 6 to 7 minutes, until golden brown. Turn over and continue cooking for 5 to 6 minutes. Brush both sides with the peach glaze and continue cooking an additional 4 to 5 minutes.
Place peach halves, cut side down on the grill and grill for 2 minutes. Turn over and brush with the reserved 1/2 cup of peach glaze, grill for 3 to 4 more minutes until peaches are soft.

I love grilled peaches in salad.

This sounds yummy, but. . .what's a frenched chicken breast? Isn't that usually a lamp chop or chicken leg with the meat scraped from the bone? How do you do that to a breast?

I used boneless breast. Frenched is on the bone.
Again, don't tell Bobby!

I really need to keep a camera in the kitchen! Yesterday we did a big batch of turnip greens with turnips. They turned out very tasty, but we could not find a freakin' ham hock in our grocery stores! Since when did a ham hock become an exotice grocery item? Smoked turkey wings did the job.

MaryBeth, that salad looks amazing.

I have lots of food photos to share (none from the fourth, HA!), but I need to organize them.

Except for this one. This is from the fourth. This is what I had to eat, late at night, when I got home after lots of wine and NO food. I dedicate this photo to bugblu because she likes nachos :D :

The non-beach weather for the long weekend sent me back into the kitchen :cry:

Mostly sides to go with whatever the BBQ King was grilling.

In addition to the sides, I lost my grits virginity this weekend. I tried Paula Deen's "Baked Cheesy Garlic Grits". That woman has no fear of fat and cholesterol. I tried to skinny down the recipe; other than the rubbery looking cheese (fat free) on the top, these were good.

The BBQ King will have nothing to do with marinades this year. The only thing that touches his meat is CBGR!
