Ok here is my meal from last Friday night all of you talking about lobsters made me hungry so I had them flown in from Maine.

Lobster Garlic roasted potatoes aspergus and corn bread. The next day i made a Lobster bisque from the stock that was great.

Made chicken fajitas (sort of) tonight. I shared the recipe with Elizabeth earluier but thought I would put it here. This was SUPER easy and delish! We opted not to have traditional fajitas though. Charlie doesn't much care for the wrapped up food. So I skipped the wraps in favor of brown rice. Here's the link to the recipe followed by photo of the dish and our toppings.

				Mary Beth,
It looks delicious, and now I know what it's supposed to look like for when I cook it tomorrow night.

That blog is actually geared to South Beach diet but there are a lot of good things there. And you don't have to take her SB tips if you don't want or need to. I've made a lot of her recipes and they are full of flavor. Enjoy!

Here is last night's attempt at sort of recreating a Miss Lucy's platter. There is coconut shrimp and crunch fish with a spicy mango mustard sauce, pigeon peas and rice, rum and orange baked yams, and a carribean cole slaw. The yams, shrimp, rice, sauce, and cole slaw recipes are all from a little pamhplet I found at St. John Spice called "A Taste of St. John."
