In keeping with the healthy theme, I made jmq's Grouper Veracruz, but with tilapia. This recipe is in the Healthy food thread. This was really good - something gave it a bite, but I'm not sure what

I really like that grouper veracruzana recipe too. It's actually in a little notebook of recipes I bring down to St. John with me, because the ingredients are easy to find there (or I brought them with me).

We cooked Korean for the ski house gang this past weekend. It was quite the hit. The vegetarians were a little bit grumpy about cooking the beef at the table Korean style, but they gorged on the Jap Chae and the variety of panchan.

oh my what is that chicken?

The lemon chicken? It's just sliced chicken breast that I marinated in garlic, ginger, and soy sauce. When I was ready to cook it I coated it with egg, then cornstarch. Into the fryer for about 3 minutes, then tossed with some lemon juice, scallions, chicken stock, and a little roasted sesame oil. It was good.

Liamsaunt, you take beautiful food pictures! You could be a stylist...

I will post that crab recipe when I get a chance. I was away in the "Mexican Riviera." Beautiful !

No way! I used to do this for another board and everyone said how much they wanted to make my food, but when we had a server crash, guess whose recipes noone had saved to their recipe books? Too much typing on my part for apparently no benefit to anyone!

X, the slaw is another Blanchards recipe. As it is in their book, it serves 10 people. These measurements will serve 4:

1/4 cup plus 1 tbsp. mayonaisse
2 tsp. dijon mustard
3/4 tsp. sugar
1.5 tsp. white wine vinegar
4 drops hot sauce (I used trinadad charlies)
1/4 tsp. caramway seeds
1/2 tsp. celery seeds
salt and pepper to taste
1 jalepeno, seeded and diced
1/4 cup shredded napa cabbage
1/4 cup red cabbage, shredded
1/4 red bell pepper, sliced
1/4 yellow bell pepper, sliced

combine all dressing ingredients and toss with the vegetables, and chill.

Canucknyc, the crunch fish I just made up. I had crunch fish at Miss Lucy's one time and have been trying to replicate it ever since. I still don't have it but this came close. Since I made it up, I did not measure. Here's my best guess:

one handful sweetened coconut
6 handfuls cornflakes

process together until well crushed. Pour onto a plate.

Then, add two handfuls cornflakes to the processor and crush until broken down but still fairly large crumbs. Mix into the other crumbs.

Lightly coat the fish with wondra flour, dip in beaten egg, then into the coconut crumbs, pressing to adhere.

Chill for about 15 minutes to firm up, then pan fry until just cooked through, about 2 minutes/side.

I made Greek food for an early dinner tonight. Most of the pictures came out blurry--I'm having real problems with my camera ever since my brother deliberately smashed it into the floor on Super Bowl Sunday (must be zen about it!), but I thought this photo of the salad came out pretty enough to post:

That Greek Salad looks great-- and I made your chicken sausage dish (but with turkey and with some ingredient guessing) for a group of runners over the weekend and they loved it. FYI, it's healthy. And runners love carbs.

You folks really inspire me to try to be a better kitchen witch. As I may have mentioned, I am NOT a natural talent in that department, but I am trying to improve. Last night I tried to recreate a dish from a Cuban restaurant that we love up here called Naked Fish. It's not really a Cuban dish but they do it really well. It's a simple peppercorn tuna served with a lemon butter caper sauce.

The tuna steak is easy as we have no shortage of fresh fish in this neck of the woods. I just crushed the peppercorns and added a big spoonful of Cruz Bay Grill Rub (that rub is just so tasty) and rubed that mixture into the steaks. The sauce has been my problem. I could have sworn that there was cream in it and just couldn't get it right. I'd add the lemon at the wrong time and the whole thing would curdle, or if it didn't, it just wasn't right. Finally, out of desperation I put a stick of butter and a couple of squeezes of lemon in a sauce pan, let it melt and added a little evoo, and a good splash of white wine and a handful of capers. It was dern tasty! There is hope. I have no photo...but it looked good, too!

Liamsaunt and Maryanne, can I ask where you find the banana leaves? I have seen them at the flowermarket in Boston but not in the produce department of the grocery stores up here. Possibly Whole Foods?

Marcia, I live near Framingham and have been able to find banana leaves at some of the small downtown Latino markets. Never at Whole Foods--though the one in Brighton sometimes uses banana leaves, I've noticed, for their fish, and I would definitely ask them if they can get you some if you have no other options. They really flavor things nicely.
