I like Gidgetpicklebrain's idea.
My choice would actually be sunset at Maho or if there is a full moon (or close to it), night time at Maho.
The people have gone and (assuming the sun sets in that area) one of the most gorgeous things I have witnessed was the sun setting while in the water at Maho and close on the list was a full moon at Maho.
Solomon/Honeymoon are definitely walking distance from EL but it is a downhill walk so remember that you will be walking back up afterwards
Also, Cinnamon can be very windy so if you choose Cinnamon, don't do it on a windy day when you feel like you are in the middle of a sandstorm
If there is a full moon when you are there, take her to dinner in Coral Bay or Chateau Bordeaux (where she may be expecting it) then take the North Shore Road home and stop to check out the moon on the water. She will have already given up on it for that night
