I don't think I ever actually watched that show either. I would never be good at primetime trivia now as my tastes have changed. I am now pretty much a reality TV junkie :roll: Survivor, Amazing Race, Dancing with the Stars... Oops, gotta go, they are going to announce who is leaving. Think I know who it will be.

Hi Cyp
You can either make your remaulade sauce from scartch
In a blender add two eggs crushed garlic a pinch of salt and pepper cajun seasoning blend till mixed then slowly pour olive oil in till it is the thickness thayouwant by the way this is done on high speed. Or you can thake mayo and mix the spices in to taste.

I have a bit of a problem with the raw egg. But I will give it a try.

It was about time Clyde got the boot. He's my home town boy, but give me a break. Apollo was a hottie!!

Cypressgirl- I used to see Apollo at the Y here all the time. He seems a lot sweeter now than he was then... then again, that was just after he won the gold.

Thanks for all the great advice and tips. I've organized my list and know how to use it. I'm excited about trying Black Voodoo Grill Rub on the Mahi! There sure are some good chefs in this bunch!

I caught up late. --YUM!--

I love taking a hot sauce and a spice rub and mixing that with olive oil, citrus juice and garlic as a marinade. I think the Cruz Bay grill rub benefits from some rehydration of the dry ingredients. Cheap fish turns out very nice baked or sauteed with the treatment.

Rick......I was waiting for you to chime in. That sounds like a winner recipe I will definately try. I have one more question for you; can you give me exact directions to the Maho Campground Restaurant you recommended for breakfast and happy hour?

If you've been to Francis Bay, then you've driven by the road to Maho Bay Campground. When you come to the T on the Annaberg/Francis Bay Road you go left. About 150 feet down the road the road to Maho Bay Campground will be on your left. You drive up the hill and park near the pavillion. Don't go down the hill towards registration.

Maho Bay Campground is a fun place to visit. The walkways are shaded and you get a treehouse feeling to the place.

Rick, I've been to Francis so I'm sure I can find the road you're talking about even though I can't picture it in my mind. I'm def. going to get there in July with my newbie friends. They are always looking for a bargain and it sounds like a lot of fun. Can you see the ocean from the restaurant?
