I hardly ever post on this thread due to a sheer lack of talent in the area but I thought I'd share this dish that I found in our local newspaper. Super easy and it was really good. It is native shrimp season right now and the fish markets sell them fresh off the boat by the pound- pokey heads and all. They are smaller than average shrimp but super sweet tasting. They are worth the pain in the neck to clean. Any type of shrimp would do - or even calamari.
So I picked up a couple of pounds for this easy dish:
1 sweet onion- chop
1/2 head of savoy cabbage shredded
minced garlic to taste
red pepper flakes
butter
fresh linguini
Saute the onion and cabbage in butter until soft and a little caramelized. Toss in pepper flakes and garlic. Cook the linguini and add the shrimp to the onion and cabbage mixture while it is still steaming. The shrimp are so tiny that they steam cook in about 2 or 3 minutes. Toss it all together with the linguini and it's delicious.It isn't very colorful so you could add some diced red pepper or chopped cherry tomatoes. No picture.

I recently picked up a couple of cookbooks by Jaiden Hair, who runs the Steamy Kitchen blog--the Steamy Kitchen Cookbook and Steamy Kitchen's Healthy Asian Favorites. I have been cooking out of both, and we have been eating Asian food almost every night as a result. I have really enjoyed everything I have cooked so far, but last night's meal was particularly tasty and so I am posting a photo of it here. Thai chicken larb lettuce cups. You could make then with turkey or pork instead, or even crumbled tofu. Photo:
I looked for the recipe on her blog but I think she must have taken it down since it is in her new cookbook Healthy Asian Favorites. If you can find the recipe, I highly recommend making it! My changes were to double the soy sauce and lime juice and add some sriracha:

As evidence by my 'withdrawal' thread, I'm missing STJ a bunch since coming back. Another thing I missed was the Beach Bar's Tuna Bites, tasty tuna wrapped in nori with a light tempura coating. If you haven't tried them, you should! Raw tuna on the inside, crunchy batter on the outside, with a nice sea taste from the nori. So, I decided to give them a shot last night without the aid of a recipe. They turned out awesome. All I did was season and slice the tuna into long 2" wide strips, wrap them in seaweed, and dip them in my favorite tempura batter. Fry time was well under a minute to keep 'em raw and sashimi-like. Since I had plenty of batter, I also threw in some shrimp, onion and sweet potato. I'm definitely doing this again soon!

That looks great pmk! I tried to replicate the tuna down now a couple of years ago but mine did not come out as nice as yours. It was still pink but not nearly rare enough. I think I cut the tuna too narrow. I'll have to try again sometime.

Practicing posting photos with my new computer in advance of my upcoming trip...I am on a learning curve with Apple! This was last night's dinner, a lovely vegetarian stew of fennel, shelling peas, shallot, asparagus, tomato, scallion, and carrot. Hoping this works...

I was contemplating what to make for dinner that would be refreshing and came across the Chicken Larb recipe mentioned by Liamsaunt a few months ago. I decided to pair that with a cold Thai style rice salad and both were amazingly delicious. I mixed some sliced green onions with the cilantro and mint leaves on top and adjusted the ingredients in both to my liking. My husband was a little skeptical when I told him what I was making but he loved it once he tried it. Thanks Liamsaunt and Minde for the idea and the link to the recipe. Here's the link to the Thai rice salad recipe.....it would make a great summertime potluck dish because it's light, refreshing, beautiful to look at and no mayo to spoil quickly.
