My sister's birthday linner. Coconut crusted flounder with mango salsa and Thai pineapple rice.

Wow! That looks awesome. Did you use sweetened or unsweetened coconut? Better yet, I'd love the recipe.

There's not a real recipe, I just made it up. I combined equal amounts of crushed cornflakes with unsweetened coconut for the crust. I meant to dredge the fish in this mango-coconut marinade that I found at the store before coating, but I forgot that I had it and so just dredged it in egg. The salsa is mango, red pepper, cilantro, chile, salt, and the juice of one lime. I found the rice recipe online here:

I used fish sauce, and omitted the stock. It was really good, I am eating some for breakfast right now.

Thanks for the recipe, Becky (that's your name, right?).
Not sure why but this miserable rainy weather in the northeast is forcing me back into comfort food craving. This is chicken bonne femme, a recipe in one of the recent cook's country 'zines. It some sort of criole-inspired dish. Quite good though I'll definitely up the heat in the next batch.

I never post here because, for the most part, my food is ugly. Tasty...but I have not time for pretty...not while being chased by raisin-wielding toddlers.
This was made one night last night down in Emerald Isle.
Jasmine Rice with onions and garlic cooked in shrimp stock.
Served with shrimp, scallops and clams.
the jackals had already attacked it by the time I could get the camera out.
Served with salad and a crapton of wine.

We had a great dinner party last week. Everyone pitched in and we made everything from scratch - gnocchi with tomato sauce, salad, cake and maple ice cream!

no pictures but I made this last night and it was quite good. did all the prep work Sunday and let the chicken sit in the sauce over night. threw it all in the crockpot monday around 11am and let it go until it was time to eat. so easy!

canucknyc - I understand everything in the picture - the wine, spray bottle, flour....but whats up with the huge flashlight?
I really want to try homemade pasta but it scares me.

Hahahaha too funny. That was used for checking the homemade wine for clarity - we had a batch of wine still in the carboy so we shone the light through it
The only pasta we've made is gnocchi, and it's easy!

canucknyc, that gnocchi looks delicious! I can't wait until I can actually eat food again.
PAGirl, gnocchi is not hard to make, it's just time consuming. It goes quickly if you have helpers.
