Yeah, my husband is doing a "Biggest Loser" type contest at work, so I've been trying to help out. Must be working - he lost 6 (or 6.2 if you ask him) pounds the first week...

Nothing better than grilling steak tips over coals at Cinnamon Bay. There's plenty of deadfall around the campsites, and the smokey virgin island flavor really comes through! Wish I was there right now.

Just fallen branches, twigs, etc. Makes for some good natural coals for the grill. Just gotta watch out for the competing termites!

Not sure why I'm still on a Mexican kick, but dang it's tasty! Here are some pulled beef enchiladas and black bean soup with chipotle peppers.

I do a lot of cooking over wood at our cabin. I keep eyeing up a dying apple tree at the edge of our property....
I have beef enchiladas on the menue for Wednesday night, YUM!

BTW: Mark Bittman, the NYTimes food critic, did a great article on soups that inspired my black bean soup. I highly recommend reading it. Once you do, you can pretty much wing a huge variety of tasty soups.

How did you make it kinda crunchy on the outside? Looks delish...better than our wine/caper/parsley talapia. Bleuch. I hate this diet.
