Well, Margo, how were those rum cakes?? :D

This is my favorite comfort food. Spaghetti with Marcella Hazan's tomato butter sauce. For six servings, cook 2 lbs tomatoes with 1/2 stick butter and one onion, peeled and cut in half, for 45 minutes. Discard onion and season with salt to taste. Basil is purely optional. :wink:

That tomato sauce sounds so yummy, and so easy!! I'm going to give it a try!

I haven't done the rum cakes yet, I made an experimental banana bread, instead. It was good, but needs more experimentation! :D

Here's what I made for tonight. I started it at 11 pm last night, and pulled it at 1:00 this afternoon when we got home from the Tall Ships Festival. It turned out waaaay yummy! :) The potato salad is from the deli. (I like mine better!)

Last night I made a one-dish meal. Lined the pan with foil and had almost no clean up. Glazed salmon with sesame green beans (done under the broiler)

Not fancy, but one of our favorite Rachel Ray dinners...Mustard Molasses Chicken One Pot dinner! Carrots, parsnips and Kale...YUM!

FOR DONUTS:
3 Tablespoons Sugar (for Pans)
1 cup Flour
1 cup Whole Wheat Flour
1-¨ö teaspoon Baking Soda
2 teaspoons Baking Powder
¨ö teaspoons Salt
2 teaspoons Cinnamon
¨ö teaspoons Nutmeg
1 whole Egg
¨ø cups Brown Sugar
¨ö cups Applesauce
¨÷ cups Pure Maple Syrup
¨÷ cups Apple Cider
¨÷ cups Plain Greek Yogurt
3 Tablespoons Vegetable Oil

Topping
¨ú cups Sugar
2 teaspoons Cinnamon
¨ö cups Butter
Preparation Instructions
For the donuts:

Preheat oven to 400 degrees.

Brush a mini muffin pan with butter and sprinkle sugar on top, shaking out the excess.

In a bowl, mix together flours, baking soda, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, mix together brown sugar, applesauce, maple syrup, cider, yogurt, and vegetable oil.

Add the dry ingredients to the wet, and stir gently just until evenly blended. Divide the batter into the muffin pan, filling the cavities only halfway. Bake for 10 minutes

For the topping: (set this up while the donuts are baking)

Melt the butter. In a large Ziploc bag, combine the sugar and cinnamon. When donuts are still hot, brush them with the butter and toss them in the cinnamon sugar mixture until evenly coated.
