A while back I sorted through my recipes and just kept what I actually thought I'd make, and now I'm trying to make all the recipes I kept!

Here's today's fare - Mini Apple Pies! :D

Made with 2 apples and refrigerated piecrusts! Easy!

Thanks! Here's the recipe, however I would make several changes, which I'll put in parentheses:

All-American Mini Apple Pies

2 medium tart baking apples
1/4 cup sugar (I'd increase to at least 1/3)
2 tbsp all purpose flour (I'd increase to 3 tbsp.)
3/4 tsp. ground cinnamon (I'd increase to a lot more! Maybe up to 2 tsp.)
2 sheets refrigerated pie crust

Preheat oven to 425 degrees F.

Peel, core & chop apples into 1/4" pieces. In medium bowl combine apples, flour, sugar & cinnamon, tossing gently. Set aside.

Open & unroll piecrust flat onto work surface. Using a 4” bowl or cup, cut out 6 circles (I used the top of my plastic drink pitcher, about 4.5”), reserving scraps. Press each circle into muffin tin.

Evenly divide the apple mixture into each prepared muffin cup. Cut reserved dough scraps into strips 1/4" wide. Top each pie with strips. (might also be good with a crumb topping)

Bake until bubbling, about 18 min. Let pies cool in muffin tin, then remove.

Those are so cute! Do you think you could freeze them, Margo? I could see making a batch of those and freezing them for a quick dessert.

Speaking of quick, I tried a new egg dish for dinner last night. It's called eggs in purgatory. All you do is heat up spicy tomato sauce and cook a couple of eggs in it. Top with basil and parmesean cheese, toast a piece of bread, and dinner is ready in less than 10 minutes. A salad would have been nice too but I was too lazy to make one.

Becky, I'm sure you could freeze them! Mrs. Smith and Sara Lee freeze theirs, don't they?! :lol: I think they'd thaw out really fast, and they'd make a great quick dessert! We had ours with Vanilla Bean ice cream and some caramel sauce drizzled over everything!

I left them in the muffin cups too long though and the crusts got a little soggy, so be sure to remove them once they're cooled enough.

Becky, I am wondering how you made those scallops so caramelized-looking?

We use our grill in the winter. Why not?

I use a cast iron skillet, heated until smoking. I can't get my grill hot enough to cook with it in the winter.

CG, I'm making your lil pies this weekend, for Blaine. They look like something I could do ok!

Liam'saunt, I tried a version of eggs in purgatory last night, and they were okay. I'm going to look up several recipes and see which of them looks best to you. I LOVE a quick dinner! And we get eggs from friends who farm:) It's a win-win!

Well, I got an "A" for trying! I need to learn how to flute the crusts....I'm not a piemaker. Blaine liked them, though, so thanks for the idea!
