I need to learn to love my crock pot more. I never use it. I think your chicken fajita recipe (from about page 3) is about the only thing I've used it for lately.

I don't use it much either .. until I see a recipe that inspires me to drag it out. Hence the pot roast.....

I made a great crock pot recipe this week. I have been so busy and this is all I really have time for.
2-3 pounds of red potatoes (cut up)
1 onion diced
2 carrots chopped
1/2 cup barley
4 cups chicken stock/broth
6 slices of canadian bacon cut into small-ish pieces
salt
pepper
thyme
Cook for 6 hours on low.
Add 3/4 cup fat free half and half
Cook for additional 30 minutes
It was delicious and super filling and only 3 WW points

X - that sounds super yummy!! I need a new crock pot. Mine is 40 yrs. old!! It still works like a champ, but it's kind of small and now they're so much nicer!

That does sound good X - do you just wash and cut up the potatoes and not peel? I avoid peeling potatoes as much as possible.
I don't suppose those 3 points include the bread for dunking?

I do not peel them, just wash them.
I have a great smal crock pot that I bought for $10 at Walmart. It is the best $10 I have spent in a while. It is perfect for just the 2 of us and easy to transport for the dreaded office potluck

X-what size serving is 3 points? Your recipe looks wonderful for this time of year and I am just bringing out my crock pot again for fall cooking. Thanks for sharing!

Hey,
When you can buy a pork loin roast for $5.00 at Safeway. I buy three of them and do different rendering recipes of each.
Try rubs on the roast and barbeque sauce. One is to pour apple juice in and then add a gravy recipe to it later.
Crockpots are are still a great way to cook a meal and it doesn't take any time when you get home.

Decided to go with Chicken Fajita's tonight, but not the crock pot version. I had bought some Penzey's fajita spice awhile ago and never used it. Didn't realize I was supposed to marinate the chicken; I just sprinkled it on and saute'd them to death. They do look a little "over seared"

They were good anyway

I have a crock pot but I never use it except for heating up meatballs and sauce if I am having a crowd over on the weekend. I think I am gone for too long during the day to leave it running, even on low.
California Girl, I use that no-knead recipe to make bread in my Le Creuset. Cooks Illustrated came out with a modified recipe utlizing beer that has a little more flavor, but I like them both. The only problem is that during the baking process, the outside of the pot gets all covered with black stuff! It's really hard to get off. The bread is good though.
Last night I made chicken souvlaki and tzatziki sauce. Easy and delicious. The pitas are from my farmer's market. They are so much tastier than the grocery pita!
