Here is my recipe for a pitcher of painkillers

1 46 Oz. can of pineapple juice
1-1/2 cups of orange juice
2 cups (give or take) of coconut run
I mix it well and pour it over crushed ice. Or you can put it in a blender.


You can use the Coco Lopez stuff (1 can) instead of the coconut rum and use regular rum (fill up the Coco Lopez can twice). I prefer the coconut rum because the Coco Lopez gets kinda yucky after a while.

My wife has been doing this pretty regularly for parties, warning it can be addictive. She uses a gallon jug well cleaned, 1 quart can of Pineapple Juice, a little can of Oj 10-12 Oz, one can of coco-lopez and a 750 ML Bottle of Cruzan Estate Dark Rum. Shake the he** out of it and serve over ice. It also helps if you order or bring home one of the little graters and some fresh nutmeg from St John spice to top each glass with. (Thanks Ruth)

With my friends, this is what we do at our Caribbean Cocktail Party

OPEN MOUTH
pour rum, oj, pineapple, and coco-lopez
sprinkle nutmeg
CLOSE MOUTH
Swish and swallow

Painkiller update and a few gems of wisdom...

My attempt at a "Painkiller Weekend" on a recent long weekend in Maine had a few bumps in the road, but I learned a few things.

1. If liquor stores in Maine are 20 miles apart, you just know your hotel is going to be at mile marker 10.
2.If Coco Lopez has separated in the can, there's no way you're going to "homogenize" it without a blender.
3. If there is no Coco Lopez to be found, straight coconut milk mixed with condensed milk is a pretty good substitute.

Post Note: On the way home, the NH liquor store had Cruzan 1.75 liters for $15 and flavored Cruzan 750s for $9... Kind of reinforces that the hassle of bringing rum back may not really be worth it.

The NH liquor stores are great. The prices are very cheap, they have a good selection of single malt scotches (Auchentoshan for $13 per 750 ml is killer) and I don't have to leave the highway to get my drink on.

Liquor stores in rest stops? What a great state!

Live Free or Die!!! I just love those rest stop liquor stores; I have another one in my little town's shopping plaza, so I never have to go very far to get the ingredients I need.

Right now my favorite drink? White Chocolate Martini! I know, it's not really a martini, but it is delicious and for years I have been jealous of those folks drinking out of pretty martini glasses. :oops:

Grey Goose Vanilla vodka, Godiva White Cholate and New Amsterdam chocolate liquer. Yummy. :lol:

I just happen to have my party book with me today at work.
We had a wedding reception at our house a few weeks ago, for my husband's daughter and her husband, and I did the pre mix thing, with everything except rum, because we gave people a choice of dark Cruzan or Coconut Cruzan.

Here's how I made my bulk mix:
8 cups of Pineapple Juice
2 cups of OJ
2 cups of Cream of Coconut

Doubling the above just fits in a gallon milk or water container, and then you can shake the s..t, out of it.

I've found that if you use a NEW can of Cream of Coconut, it doesn't separate. You can tell if it's old, because it won't pour out of the can. If it's too thick to pour, it will separate quite quickly.
