I know there are a few folks that use techni-ice, but I travelled with a cooler of frozen food with no "ice" for 9 hours and everything was still rock solid. I vac. packed everything and stacked it in the soft sided cooler with newspaper in between.
Make sure that the cooler is packed tightly with no extra room and you will have no problems.

In prior years, we checked coolers wtih no ice at all, just frozen solid food and frozen water bottles and baccardi drink mixers. Always arrived frozen solid.
In Nov 06, I used cheapy blue ices, the plastic containers filled with blue liquid/gel, for our son's lunch box carry-on. I got the evil eye from Tampa TSA but they let me through without comment. I would not try this again.
I have found that keeping my lunch cooler in the freezer the night before and having all food well chilled is sufficient for our travelling lunches/snacks.

I usually am packing with kids in mind for the plane but some of my inflight staples include:
*pistachios
*granola bars
*goldfish
*pretzels
*gummy bears
*mini m&ms (great for bribery, but use in moderation no sugar rushes!)
*apples
*string cheese or the individual packaged cheeses
I like to have lots of variety for them and lots in my bag of tricks. Those little ziplock snack size bags are great for this.
