Tonight, grilled tuna that had been marinated in CBGR and olive oil. Served with a mango "relish", asparagus and parmesan cous cous. Oh and a glass of Sauvignon Blanc

Very nice, Mary Beth! I love tuna with mango salsa. Sometimes I put black beans in as something extra.

here's my porn from the night before last. grilled lemon pepper chicken (grilled in the wicked storm I might add!) over a sort of waldorf salad. greens, an apple, peppers, cukes, feta, etc.

Mary Beth it looks incredible and not high in calories either! Very refreshing! It looks like something to eat when it is hot and sticky outside! Perfect for St john! :D

I think we need to have an "Iron Chef St John", competitors will include Ron_L, Waterguy, LiamsAunt, Marybeth, and Rick G! If anyone else has the talent to stand up to these innovative chefs, feel free to challenge them! :D

If I took a pic of my dinners, it would be MickyD's Cheesebuger laying on a field of fries with a tomatoe salsa - heheheh. For some reason I don't think it would qualify for the Iron Chef St. John contest!!!

I'm in. I think I can hold my own given the right ingredients. I love to cook. On the other hand, cleaning sucks.
