Hello all - long time lurker, first time poster. We have been going to STJ since 1991 and I love this forum. Been lurking for Years!!! Hopefully I can be more active!
I have to chime in here and give my vote to Foxy's. We always get the Roti!

I've had good Roti on the Willy T as well as at Cuzzins on STT.
Good luck with the Roti search!

Wow what wonderful reponse to this thread!! I doubt if we will get to the BVI this trip so I wondered if anyone made them on STJ. Hercules was the first place that came into my head. I know they do a good pate but I didn't know if they did roti's. We will try Sweet Plantains, Miss Lucy's and Sputnick's for sure. Thanks, guys!!
My countdown is at 29 today.

After this thread i decided to make chicken Roti for dinner tonight. I used this recipe...
http://www.caribbeanchoice.com/recipes/ ... recipe=228
Here's the filling...
I cheated and used flour tortillas instead of making Roti bread...
And then rolled it up with some Mango Chutney...
I also made a Mango Cole Claw from this recipe...
http://www.caribbeanavenue.com/kitchen/ ... u023.shtml
I've never had a Roti before but this was very good. Now I have another reason to go back to St. John.

You really are a tease! This looks great.
I had leftover ribbon winning chili tonight while I was grading beer judge exams. You win!

They have beer judge exams? Are the exams written or liquid?

Wow, never heard of it, never had it and can't wait to try it. (Sounds like a good enough excuse for another vacation.) Ron, that looks amazingly delicious! Is it spicy at all? I love spicy hot. Ali~

Check out
http://www.bjcp.org/index.php. I've been a certified beer judge for 20 years and a certification exam grader for about 14 years. It's sort of like being KCBS barbecue judge, but with a lot more rigor.
Cheers, RickG

It can be spicy. My wife doesn't like hot food so I backed off on the Blind Betty hot sauce in the recipe but added my own to my plate.

That certainly is a lot more rigorous that the KCBS CBJ class! I went through a CBJ class in January and I'm judging at my first competition over Memorial Day weekend.

Ron, that looks really yummy! I went to check out the coleslaw recipe, and in the tips section for the accompanying pelau, I saw this:
"Chicken pieces pre-cleaned of bones and cartilage add convenience for that more "sophisticated" setting where ladies may be involved."
For some reason that made me laugh.

If you're catching one of the New Horizon speed boats or any of the speed boats to The Baths & Jost, you might check to see if they stop at Marina Cay.
The best dang Roti I've ever had.
