They were very stable for us - I would be more concerned with his height since there are places for your feet and his legs might be too long. My son is about 5' 8" and he fit fine. He could rest them on top of the kayak rather than using the foot rests though.

They do have other models that might work better.

I am always SO impressed when people don't rent a vehicle and have a great vacation! I definitely want to try it one day. And never did I imagine a primary mode of transportation would be a blow up kayak! Kudos for you creativity and ingenuity.
