Calistoga is a nice little town, BUT I think for purposes of centrality, I'd stay nearer to Napa. You'll have quicker access to the Sonoma area, which I like to say is just around the corner. I know it's not a B&B but you might try Embassy Suites in Napa. They usually have great rates and you get a very decent breakfast thrown in.

Staying right in the valley is really wonderful. I'd recommend continuing to check the reservation site for openings from cancellations.
