there was certainly nothing Caribbean about the day we had in NJ today but had to make this Calypso Chicken from the Blanchard's cook book. listened to Jimmy Buffet with dinner .. that helped ... a little.

very very good.
it calls for heavy cream which I had so I used it but I'd like to lighten it up next time.
I will type up the recipe soon, promise

I tell ya, I think I have to blame the rise in my cholesterol & triglycerides on the Blanchards!

Maybe I can cook from their books once a week? Every other week? Something I made a week or so ago called for 2 sticks of butter!

You know that's why it's all so yummy, don't you?

most times I try a recipe out as is the first time around. then I see where I can make substitutions and cut down volumes etc etc.
2 sticks of butter.... hmmm... was Paula Deen involved?

I think the two stick of butter one is the Caribbean corn bread recipe. I've made it....it's not worth the calories, trust me!
I do love both Blanchards cookbooks. Even though they are so fattening.

Becky, you're right! It was the Caribbean Cornbread! I thought it was pretty yummy, but wow... so bad for you!

In retrospect, I don't see that it really needs 2 sticks of butter... it was pretty "greasy" (for lack of a better word).

Some fall cooking -
No pics of the final product, but these pancakes are delicious
Although last Sunday looked more like Christmas, we enjoyed Rachael Ray's Thanksgiving Turkey meatloaf (stuffings mixed in) with sour cream and onion smashed potatoes and apple cider gravy - YUM-O
I decided to break in the new Le Creuset today
with a simple Pot Roast braised in a bottle of wine - so good, so good!

Wow! I never thought about putting stuffing mix in a turkey meatloaf! Genius! I kind of stopped making turkey meatloaf because it just never tastes right to me, although we eat a lot of ground turkey in this house. The stuffing would make it just about right, I think! Thanks for sharing that!
Also, here's a recipe for your new Le Creuset. I don't have any Le Cruset, but I'm thinking this might be a good excuse to get some... what do you think?
